Steamed Rice Cake Recipe is a very old recipe; however, before we go into details of how to cook steamed rice cake, few basic things should be cleared. Recipe of Steamed Rice Cake has many different variations, thanks to many different places, where it is loved by many. Another common misconception that should be cleared at the outset is that “Rice Cake” is not a cake, the name is a misnomer.
In India, this dish is very popular in the eastern zone and the southern zone of the country, where with a little change in ingredients, it is called by many different names. Besides India, this dish is also very popular in some other Asian countries like – China, the Philippines & Japan, where majority of people are rice eater. Recipe of steamed rice cake is also popular because the dish is simple to prepare and very easy to digest.

Ingredients to Prepare Steamed Rice Cake
- Rice Flour – 250 grams
- Water – 400 ml + extra water ½ cup
- Tapioca Starch – 2 tablespoons
- Sugar – 150 grams for syrup & 1 teaspoon for mixing with yeast
- Dry Yeast – 2 teaspoons
- Coconut milk powder – 100 grams
- Vanilla Essence – 6 to 7 drops
- Edible oil – 1 teaspoon

How to Make Steamed Rice Cake

A batter is prepared in a container by mixing 200 ml water with 250 grams of rice flour and kept aside for 30 minutes, after covering its open portion by a lid.

Next, the remaining 200 ml of water is taken in a pan and 1 teaspoon sugar is dissolved in it followed by yeast powder, which is mixed thoroughly with the help of a spoon. This is now transferred to the pan with rice flour batter and mixed nicely with it. Its open top is now again covered by a lid and kept in a warm place for 2 to 3 hours for proper fermentation.

In hot weather, the time needed for fermentation is less but in winter the time taken for fermentation increases. So, it would be advisable to check for proper fermentation, by opening the lid after 2 hours and have a look.

Adequate bubbles visible on the upper surface of the batter indicates that the fermentation procedure is completed. If it is not so, then the container is again covered with a lid and sufficient time allowed to elapse, so that bubble becomes visible on the upper portion of the rice batter

Next, the coconut milk powder is poured into a container, along with edible oil and tapioca starch and ½ cup extra water as mentioned in ingredients, is gradually added to it along with vanilla essence and the mixture, mixed uniformly with the help of a spoon. Now the contents are added to the container with fermented rice batter and the contents allowed to rest for another 20 minutes, after covering the container with a lid.

In the meantime, 1-liter water is taken in a steamer and allowed to boil on a medium flame burner. People who do not have steamer can use wide, deep vessel container having the above-described amount of water.

The bottom and sides of the molds are greased by a brush. A plate is put on the bottom of the vessel in which water is boiling. The molds are kept on the plate (partially submerged in water) for 2 to 3 minutes and the lid of the vessel is covered.

By a big size spoon, the rice batter is stirred for 3 to 4 minutes. Next, the molds are taken out of the container having boiling water. Now the rice batter is poured on the mold in such a manner that it fills 3/4th portion of the mold while top 1/4th remains empty. Now the mold is again transferred back into the container with boiling water and the container covered by a lid. It is allowed to boil on a medium flame burner for 20 minutes

Then the molds are taken out of the container and allowed to cool at room temperature.

Once solidified, the steamed rice cake preparation can easily be taken out from the molds and kept separately in a dry plate.
