A) For Kofta
1) Khoya/Paneer – 100 grams
2) Potato (Boiled) – 1 Large sized
3) Maida (White Flour) – 4 Teaspoons (full)
4) Raisin (Kismis) – 10 grams
5) Oil (White) – 200 grams
Ingredients for making Malai Kofta (for making the Kofta component)
B) For Gravy
1) Butter – 2 Tablespoons
2) Curd – 2 Tablespoons
3) Coriander Powder – ½ Teaspoon
4) Chili powder – ¼th Teaspoon
5) Salt – ½ Teaspoon
6) Sugar – 1 Tablespoon
7) Boiled Onion Paste – 2 (Of large size)
8) Garlic Paste – 7 to 8 Cloves
9) Cashew (Kaju) – 30 Grams
10) Almond – 20 Grams
11) Fresh Cream – 100 Grams
12) Milk – 1 Cup
13) Water – 1 Cup
14) Coconut Milk Powder – 50 Grams
15) Cinnamon stick – 1 Large Size
16) Black Pepper – 8 to 10 in number
17) Cardamom Powder – ¼th Teaspoon

How to Make Malai Kofta – The Preparation of Kofta

The Khoya/Paneer should be mashed with the boiled potato. The final consistency should be smooth so that no lump should exist in the mixture. Now flour (Maida) is mixed with the said mixture uniformly.

Now to check the consistency of this mixture, a little portion of this mixture is taken and put on hot oil. If it maintains its original shape then its consistency is all right, but if it breaks up then little more white flour should be mixed with the previous mixture & again checked this way. If things go the right way & there is no breakage, that means the dough is ready for making Kofta, otherwise, the previous steps are repeated.

Once the dough is ready, a small portion of it is taken and pressed between 2 palms and shaped into a circular puri.

Now two raisins are placed in the center of puri and all its edges are closed together.

Now it is molded into the shape of a round ball by revolving it gently and keeping between the center of both palms.

In an above-described manner, multiple round ball-shaped koftas are made.

Now a Karahi (a deep container) is put on a low flamed burner. Adequate oil is added for deep frying of Koftas. Once the oil is hot, all koftas are fried in it and kept aside.

How to Make Malai Kofta – The Preparation of Gravy

The almonds and Kaju are put in a grinder and ground to a fine powder. Coconut milk powder is mixed with it and the mixed product kept aside.

In a non-stick pan on a low flamed burner, butter is put. Once it gets warmed, cinnamon stick and black pepper are added. After some time a good fragrance starts to come out. Now garlic paste is added to the mixture, which is kept on stirring till the pungent smell of garlic disappears.

Now boiled onion paste, coriander powder, and chili powder are added to the above mixture one by one as it is stirred.

Later salt, sugar, and curd are next added to the above mixture and stirring continued for 2 to 3 minutes. Water (in the amount mentioned before) is added to the mixture and the boiling continued for 2 to 3 minutes.
Next, the mixture which was prepared from Kaju, almonds, and coconut milk powder as described initially is put in milk and mixed uniformly with milk. Now this mixture containing milk is transferred into the non-stick pan and mixed with its contents. Boiling for 3 minutes facilitates the uniform mixing and cooking of the 2 mixtures to form the gravy of Malai Kofta.

How to Make Malai Kofta – The Final Steps

Once the gravy is ready, the burner is switched off and the prepared Koftas are added to it.

The Koftas are gently mixed with gravy, taking care to ensure that they do not break.

Finally, fresh cream and cardamom powder are mixed to the above-mentioned product, once it gets little cooled. Malai Kofta is totally ready now and is fit for serving.
