Rice is the staple diet of the vast majority of the people in the Indian Subcontinent. When more than a billion people living in different parts of the subcontinent eat rice every day, then it is quite obvious that some genius mind somewhere would come up with an innovation, which can give can give rise to a totally different taste to a mundane staple food. This has given rise to different varieties of rice preparation; the recipe of Jeera rice is one of them.
For the uninitiated, it would be prudent to mention that Jeera is the Hindi term for “Cumin”. So, it is highly obvious that Jeera rice recipe is a method of rice preparation which uses a combination of Cumin and Rice. Some people may be surprised by this combination, and those who are unfamiliar with Indian cooking may find it strange. Jeera rice recipe although very easy to make, is indeed very tasty to eat when prepared in the correct way. It can be made very fast and the making of Jeera rice takes a minimum or no botheration if you want to prepare it at home.
For those who are interested to know – how to make Jeera rice at home, a few good news first. As we have already said that the Jeera rice recipe is very simple to make and Jeera rice can also be prepared in a pressure cooker or even in a simple pan if the former is not available. Recipe of Jeera rice is also suitable for various different modifications, like adding different vegetables in the preparation. Of course, then the preparation is no longer a classical Jeera rice preparation, but more of a vegetable fried rice preparation, which we have discussed elsewhere. The classical recipe of Jeera rice does not need many other ingredients, as our following method is going to prove.
Jeera Rice Recipe
Ingredients for Making Jeera Rice
1) Good quality aged Basmati rice - 1 cup
2) Black Cardamom - 2 in number (little ones – crushed)
3) Green Cardamom - 3 to 4 in number (little ones – crushed)
4) Cinnamon stick – 1 stick (2-inch-long, broken into 2 pieces)
5) Cloves – 5 to 6 in number
6) White Jeera seed – ½ Teaspoon
7) Salt – ½ Teaspoon or according to taste
8) Green Chilli – 1 in number (finely chopped)
9) Butter/Ghee – 2 Tablespoons (Good quality)
10) Water – 2 ½ cup for normal pan and 1 ½ cup for a pressure cooker preparation
11) Sugar – 1 Teaspoon
12) Coriander leaves – 15 gm (finely chopped and is optional and added according to taste)
13) Star anise – 1/4th of a piece
14) Bay Leaves – 2 in number

How to Make Jeera Rice at Home?

For making Jeera rice, the first thing you need is good aged Basmati rice. The rice is washed 2 to 3 times, in extra water. The water is drained thoroughly. Next, the rice is spread on a dry piece of clean paper & kept in an airy place, so it gets dried once the water vaporizes.

Now in a cooker or in a pan on a medium flamed burner, 2 tablespoons of butter or ghee are put. As the ghee or butter gets warmed, it gradually melts. Now Bay leaves followed by Cinnamon sticks, Black Cardamom, Cloves & finally green Cardamom are added.

The mixture is stirred properly. In a short while, a good aroma starts coming out of the mixture. Now the Jeera (cumin seeds) is added to it.

Once the Jeera starts to change color then rice and chopped green chilies are added to it. It is gently stirred for 2 to 3 minutes and water (in previously mentioned amount) is added.

Making of Jeera Rice in Pressure Cooker - In case of a pressure cooker, 1 ½ cup of water is added, along with star anise, salt & sugar (in quantity as mentioned above). The lid is covered with the pressure cooker on a medium flame. After the sound of 2 whistles, the burner is switched off. Later the pressure cooker is allowed to cool in normal room temperature. After some time the lid is opened and coriander leaves are sprinkled on the rice and mixed properly. In this way, the making of Jeera rice is done with the help of a pressure cooker.

How to make Jeera Rice in Pan - In case a person decides on making jeera rice in a pan (if the pressure cooker is not available), then 2 ½ cups of water are added to the previously prepared rice mixture followed by Star Anise, Salt & Sugar, which are next added. The lid is covered and the contents allowed to boil for 10 minutes on low flame burner. After 10 minutes the burner is switched off and the lid is opened. With the help of a spatula, the preparation is gently stirred. Next chopped Coriander leaves are sprinkled on it and mixed thoroughly. Jeera rice is now ready to be served.

Jeera Rice Restaurant Style

Although the discussion above mentions how to make Jeera rice at home, here we are also taking small liberty in discussing Jeera rice restaurant style.

In the restaurant, the steamed Basmati rice is prepared in a regular manner.

Just before serving guests, butter is put on a pan placed on a medium flamed burner. Once it gets warmed, then black Cardamom, Cinnamon stick, Cloves, Green Cardamom & Jeera (Cumin seeds) should be added one after another. Once the aroma of the mixture starts to come out, chopped green chili & Star Anise are added to the mixture and stirring is continued for 2 minutes. Next, the hot ready-made rice prepared earlier is added to it.

The mixture is stirred gently for 3 to 4 minutes and next sugar, salt & chopped coriander (optional) are added to this mixture and mixed evenly.

The container is kept covered now. Jeera rice is ready now for serving hot.
