Dal (pulses) preparation is perhaps the most ubiquitous item found in meals prepared in Indian homes and restaurants. It is served with rice, which is the staple diet for most Indians and also with other preparations like – Roti or Parathas. However, the simple dal prepared in the majority of Indian homes is often quite bland and may become monotonous in taste, when taken every day. Dal Fry recipe is very popular among all the homemakers in India, not just for its taste but also because of the ease of its preparation. Toor Dal/Arhar Dal (Pigeon pea lentils), Masoor Dal (Red Lentils) and Mung Dal (Petite yellow lentil) all can be used for the recipe of Dal Fry. However, in our Dal Fry recipe, we have only described how to prepare Dal Fry with Moong Dal (petite yellow lentil). People fond of other Dal/Pulse preparation can use the Dal of their own personal choice, as per individual liking.

Moong Dal (Petite yellow lentil) – 3/4th cup

Ghee (Clarified Butter) – 2 Tablespoons

White Oil – 2 Tablespoons

Water for Boiling – 3 Cups

Salt -1/2 Teaspoon

Onion – 2 Large pieces (chopped finely)

Ginger garlic paste -1 Teaspoon

Garlic cloves – 6 to 7 in number (crushed)

Tomato – 2 mediums sized (very finely chopped)

Green Chilli – 2 pieces (finely chopped)

Dry Red Chilli – 2 pieces (left intact)

Coriander leaves – A handful (chopped)

Curry Leaves – 3 to 4 in number

Cumin seeds (Jeera) – ½ Teaspoon

Mustard Seeds – ½ Teaspoon

Asafoetida (Hing) – ½ Teaspoon

Coriander powder – 3/4th Teaspoon

Turmeric powder (Haldi) – ¼ Teaspoon

Garam Masala Powder – ½ Teaspoon

Extra Salt – As per individual taste

Kasuri Methi (Fenugreek leaves) – 1/4th Teaspoon
How to Make Dal Fry at Home?
Making Dal Fry at the outset may appear as a monumental task if you just consider the long list of the ingredients concerned. However, Making of Dal Fry is a very easy task, as we are just going to describe now. Most of the ingredients can be easily found in the neighboring market, anywhere in the Indian Subcontinent. Here we are going to describe the making of Dal Fry in a step by step manner.

A cooker is put on a medium flamed burner and 2 tablespoons white oil is put in it. Next red chilies are put into it and fried and kept aside.

Next Dal as mentioned in the ingredients, is put on the cooker and fried. Stirring is continued, till a nice aroma of the pulse starts coming out. Next 3 cups of water, salt and turmeric powder (as mentioned previously) is added to it and allowed to boil.

The Dal in the cooker left on the medium flamed burner will take 6 to 7 whistling alarms of the cooker to get boiled totally.

After the Dal gets boiled, the pressure cooker is removed from the burner and kept aside and allow it to be cooled. Once the components inside get cooled, they are mixed homogeneously.

Another nonstick pan is put on the medium flamed burner. A good quality of above-mentioned ghee is put in it. After the Ghee becomes warm, then mustard seed and curry leaves are added to it. When the mustard seeds start spluttering, then cumin seeds are added to it. As the cumin seeds start changing the color, then Asafoetida & coriander powder is added to it and stirred a little bit. Next chopped onion is added and fried till it becomes soft. Later crushed garlic is added, followed by ginger garlic paste and stirred, till the strong pungent smell disappears.

Next, to the pan, chopped tomatoes and chopped green chilies are added and stirred, till Tomatoes become very soft. By now the whole mixture should have taken a consistency similar to that of toothpaste. Next Garam masala powder is added & stirred for 2 minutes and the previously prepared boiled Dal is added to it. This is allowed to boil for 5 minutes.

Next Kasuri Methi powder is mixed to the earlier prepared mixture. Now the preparation is tasted for the salt content. If the preparation is less salty than what is desired, then further salt according to individual preference is added. The preparation is stirred for another 1 minute and the burner is switched off.

Chopped coriander leaves and fried red chili are spread over the now ready Dal mixture. The Dal Fry is now ready for consumption.
