1) Potatoes – 2 of Medium size
2) White Flour – 1 Teaspoon
3) Rice Flour – 1 Tablespoon
4) Kashmiri Chilli Powder/Paprika – 1 Teaspoon
5) Salt – 1/4th Teaspoon
6) White Oil – 1 cup
7) Cold Water – 3 to 4 cups

B) Ingredients Used in Recipe of Chilli Potato (For Making Chilli Potato Sauce)
1) Soya Sauce – 1 Teaspoon
2) Chilli Sauce/Red Chilli paste – ½ Teaspoon
3) Tomato Sauce – 2 Tablespoons

1) White Oil – 2 Tablespoons
2) Garlic Cloves (Chopped) – 8 to 9 Cloves in number
3) Onion (Chopped) – 1 of large size
4) Capsicum – 2 in number
5) Green Chilli – 1 in number
6) Chilli Powder (Optional) – ½ Teaspoon (Kashmiri Chilli Powder preferable)
7) Salt – ½ teaspoon or as per taste
8) Sugar – 2 Teaspoons
9) Vinegar (Red Colour) – 1 Teaspoon
10) Sesame seed – 1 Teaspoon
11) Spring Onions/Cabbage (According to personal preference) – ½ cup finely chopped
12) Water - 3 Tablespoons
13) Cornflour – 1 Tablespoon

How to Make Chilli Potato at Home
Initial Preparation of Vegetables in Chilli Potato Recipe

Initially peel the potatoes properly and wash them thoroughly under tap water. Cut the potatoes into two halves, cutting them longitudinally and then again cut each half, into longitudinally 1cm wide pieces.

Now take 3 to 4 cups of very cold water in a deep vessel container and dip the potato pieces into that water, for at least half an hour. In the meantime, cut the garlic cloves into small pieces and keep them on a plate. In the same way, cut the onion into small pieces.

Slit Green Chilli longitudinally into two portions. Cut Capsicum in the same way as potatoes has been cut and keep them aside.
How to Make Chilli Potato Sauce

Now in a small bowl, take 2 tablespoons Tomato Sauce. To this, mix 1 teaspoon Soya Sauce and ½ teaspoon Chilli Sauce or Chilli Paste all together along with a little water (approximately 2 tablespoons). Mix the components uniformly and keep this sauce aside.

After dipping the Potato pieces in water for half an hour take them out from the water and to make it dry, keep them on a spread clean and dry newspaper, under the fan. Once the extra moisture evaporates from the potato pieces, then transfer them to a bowl.

Mix 1 teaspoon white flour, 1 teaspoon Kashmiri Chilli powder/Paprika, and 1 tablespoon rice flour with 1/4th teaspoon salt nicely, then spread this dry mixture on the potato pieces and mix them evenly and gently, so that potato pieces would get coated nicely, with this dry powder mixture.

How to make Chilli Potato Crispy & Dry

Now put a non-stick Karahi on a low medium flame burner, add 1 cup oil to the Karahi and allow it to get warm. Next put the powder-coated potato pieces (4 to 5 pieces) in the hot oil, but the point to be noted is that potato pieces should not get overcrowded in the Karahi and they should get enough space between them for frying in the Karahi. Stir the contents after 1 to 2 minutes.

Once the Potato pieces start to change the color and become crispy then take them out from the oil and with the help of a slotted spoon and keep them on a plate. Like this fry all the potato pieces and keep them aside.

Next remove all the oil from the Karahi, leaving only just 2 tablespoons of oil in it. Now add 1 teaspoon of Sesame seed in the hot oil and fry it a little. Later add chopped Garlic Cloves pieces in the oil.

Stir the contents and after 1 minute add chopped onion pieces and sauté it tills it becomes glossy and then add slitted Green Chilli into the Karahi and stir it for 1 to 2 times and then add Green Capsicum pieces along with salt.

Stir the components for at least 2 minutes and then add the sauce mixture (previously prepared) along with sugar into the contents present in the Karahi. Mix all the components uniformly and allow them to cook for 1 to 2 minutes.

Make a mixture of 1 tablespoon cornflour, 3 tablespoons water, and 1 teaspoon vinegar and transfer itto the Karahi having components described earlier. If anybody likes a hotter taste then they can add ½ teaspoon chilli powder in it and mix it properly (otherwise it is not required).

Add chopped spring onion/Shredded Cabbage pieces to the contents in Karahi (here we have used only Spring Onion and not Cabbage pieces) and mix them uniformly to the previous contents.

Stir the contents 2 to 3 times and then add fried potato pieces, which we have made earlier and mix it to the mixture present in the Karahi and mix all the components uniformly.

The only notable difference in Chilli Potato Gravy Recipe is that in the step,described in bold letters above i.e. describing where a mixture of 1 tablespoon cornflour, 3 tablespoons water and 1 teaspoon vinegar was made in the (crispy and dry variety); add 1 cup of water instead of 3 tablespoons of water.
