Recipe of Dum Aloo - How to Make Dum Aloo at Home
Dum Aloo is an Indian dish that has Aloo (Potato) as its main component. This simple dish is very easy to prepare, which makes the Recipe for Dum Aloo very popular among the housewives & restaurateurs alike. However, people in different parts of the country may add or delete some minor components, which are used as ingredients for Dum Aloo preparation, because of the unavailability of the component or due to personal liking or disliking, which can change the method of preparation and the final taste of the dish to a certain extent.
For this reason, there are many varieties of preparation of Dum Aloo and different Dum Aloo Recipes. However, our discussion here would be restricted to discussing an easy Dum Aloo recipe which is used mostly in northern India.
Dum Aloo Recipe
A) Main Ingredients of Dum Aloo, Used in Recipe for Dum Aloo
- Baby Potatoes – 200 grams
B) Ingredients for Dum Aloo (for Gravy Preparation Step) Used in Recipe of Dum Aloo
- Onion – 1 large size
- Ginger – ½ inch long
- Garlic – 7 to 8 cloves
- Tomato – 1 of medium size (shouldn’t be sour)
- Fresh curd – 50 grams (Shouldn’t be sour)
- Edible Oil – 1 tablespoon
Ingredients of Dum Aloo (for Gravy Preparation Step) along with Potatoes.
C) Spices Used in Preparation of Dum Aloo Recipe

Edible oil/Ghee -3/4th tablespoon

Salt – ½ teaspoon or as per taste

Turmeric powder – 1/4th teaspoon (a little for sprinkling on potatoes and rest portion in the main preparation)

Kashmiri Chili Powder – 1/4th teaspoon
-
Coriander powder – ½ teaspoon
-
Fennel powder – ½ teaspoon
-
Kasuri Methi (Dried Fenugreek leaves) powder – ½ teaspoon

Garam Masala powder – ½ teaspoon
-
Fresh cream – 50 grams
-
Sugar – ½ teaspoon

Whole cumin seeds – A large pinch

Bay leaves – 2 in number (of small size)

Cloves – 4 in number
-
Whole Cinnamon Stick – ½ inch long (single piece)

Whole Black Pepper seeds – 8 to 10 in number

Cumin powder – ½ teaspoon
-
Water – 1 cup

Coriander leaves – 2 tablespoons for garnishing

How to Make Dum Aloo
Initial Preparation of Aloo in Recipe of Dum Aloo

Wash the potatoes thoroughly in water and clean its outer surface.

Now take a deep vessel pan and put it on a medium flame burner. Add 3 cups of normal tap water into the pan and add the potatoes in it and let it boil for 4 to 5 minutes, by covering the lid of the pan.

Later switch off the burner and take out the potatoes and put them in a plate and allow it to cool at room temperature. Once it becomes cool then peel out its outer surface and prick them by a fork, so that in the time of cooking the taste of spices enters its inner portion.

Gravy preparation in Dum Aloo Recipe

Now in a non -stick pan take 1 tablespoon oil and put it on a medium flame burner.

Cut Onion, Ginger and the Tomato into small pieces. When the oil on the pan gets hot then add onion to the pan and fry it for 1 to 2 minutes. Then add ginger pieces, tomato, garlic cloves in it and stir it continuously till its raw pungent smell disappears. Then switch off the burner and allow the mixture to become cool at the room temperature.

When it becomes cool then transfer the contents to a grinder and grind it till it becomes a smooth paste. Add curd into the contents in the grinder, and grind once more. Later keep the gravy mixture paste aside after removing it from the grinder.

The Final Steps in Recipe of Dum Aloo

Sprinkle little turmeric powder on parboiled pricked baby potatoes and mix them nicely by hand. Next, put a Karahi or non – stick pan on a low medium flame burner. Add 3 to 4 tablespoons of ghee/oil into it and allow it to get warm.

Once the ghee/oil gets warmed then put parboiled potatoes in it and stir it gently and fry it till its color changes to golden yellow. Then take them out and put them on a plate and keep it aside.

Now in the remaining ghee/oil present in the karahi/non- stick pan, add cumin seeds and fry it. Next add Bay leaves, Cinnamon stick (after breaking them into small pieces), Cloves and whole Black pepper to the karahi/pan and fry them a little, till a nice aroma starts to come out.

Next, add previously prepared gravy mixture (mentioned above) to the contents and stir. Add Turmeric powder, Cumin powder, Coriander Powder, Fennel powder and Kashmiri Chili powder, one by one to the same mixture & mix them uniformly and fry them properly.

When the oil starts to separate from the mixture, then add fried potatoes in it along with salt and sugar. Cook the contents for another couple of minutes, so that the components get uniformly mixed. Later add 1 cup water in it followed by Garam masala powder. Mix it with the gravy preparation and cover the lid of the pan properly and make the flame very low and cook for 8 to 10 minutes.

Afterward, switch off the burner. Add Kasuri Methi powder and fresh cream to the preparation. Mix the components uniformly and cover the pan with a lid and keep it for another 5 minutes in this condition.

Later transfer the Dum Aloo preparation to a serving bowl and spread Coriander leaves on it for garnishing. Dum Aloo preparation is now ready to be served to your friends or family members.

Here we would like to emphasize that many Brahmins in India, do not take onions and garlic in their diet. For them Dum Aloo Recipe without onion and garlic would be exactly like the Recipe for Dum Aloo described above, we just have to exclude the onion and garlic from the Ingredients of Dum Aloo.
