Chicken Masala is a very popular dish in northern India. Masala means condiments, so Chicken Masala Recipe is a preparation that is prepared by using different condiments, though only a few varieties of these are required. The Recipe for Chicken Masala finally produces a dish that has a brilliant taste and can be prepared with minimum difficulty.
The Recipe of Chicken Masala can be grossly divided into 2 types. These are - Recipe of Chicken masala gravy variety and Recipe of Chicken masala dry variety. The Recipe of Chicken masala gravy variety can be again of quite a few different types, the method used here is known as Chicken Salana preparation.

Ingredients Used in Recipe for Chicken Masala
Chicken pieces – ½ Kilogram
Ginger – ½ inch long piece (finely grated)
Garlic – 8 to 10 big cloves (grated finely)
Black Salt – 1/4th teaspoon or as per taste
Sugar – 2 teaspoons
Tomato – 1 of large size
Kashmiri Chilli Powder – 1/4th teaspoon
Good quality Garam masala powder – ½ teaspoon
Raw Clove pieces – 5 to 6 in number
Raw green Cardamom – 4 in number
Cinnamon – 1-inch long stick
Whole Black Pepper – 7 to 8 in number
Onion – Of 2 large size
Turmeric powder – 1/4th teaspoon
Fennel powder – 1 teaspoon
Coriander Powder – 3/4th teaspoon
Coriander leaves – 2 tablespoons (finely chopped)
Milk – ½ cup
Mustard Oil – 3 tablespoons
Water – 1 cup
Bay Leaves – 2 in number

How to Make Chicken Masala at Home – The Procedure
Wash the chicken pieces thoroughly under tap water and then store them in a clean bowl. Carefully drain out the extra water from the Chicken pieces. Then add 1 tablespoon oil (of the total 3 tablespoons taken for preparation) followed by salt, turmeric powder, Kashmiri Chili powder, finely grated garlic & ginger (in amounts as described in ingredients) to the Chicken.
Finely chop 1 onion and mix the Onion pieces with Chicken. Mix all the components mentioned earlier uniformly with the Chicken and then cover the bowl with a lid and keep it aside for at least 1 hour for marination.

Meanwhile, put the Tomato in a mixer – grinder and grind it till it becomes a puree-like mass and then keep it aside.

Finely chop another Onion (the leftover one) and keep it aside.
Put 1 tablespoon oil in a Karahi and transfer it to a low medium flame burner. Spread the oil on the entire surface of Karahi and allow the Karahi to warm properly. Then transfer the finely chopped Onion pieces to the Karahi and sauté it constantly with a spatula, till it becomes brown. Then switch off the oven and take out the Karahi with the fried Onion pieces & later transfer the fried Onion pieces into a small plate and keep it aside for use later on.

Now take raw clove pieces, green Cardamom pieces, Cinnamon, and Black pepper (in amounts as described in ingredients) in a pestle and break them into coarse pieces and keep them aside.

After 1 hour when the marination of Chicken is completed, put a non-stick Karahi on a medium flame burner. Put the remaining one tablespoon of oil in it and allow it to get warm. Then add crushed clove, Green Cardamom, Cinnamon, Black Pepper mixture (created earlier by grinding in a pestle) into the oil along with Bay leaves.
As soon as a nice aroma starts to come out, then at once add the marinated Chicken to the contents and keep on stirring constantly. When water starts to come out of the Chicken then add Coriander Powder, Fennel Powder, Sugar to the Chicken and stir it so that the preparation mixes uniformly with the Chicken.
Add Tomato puree (made earlier in the mixture – grinder), fried brown Onion pieces, Garam Masala Powder into the Chicken preparation and mix everything nicely and cover the Karahi with a lid and cook it in a low flame.

Keep on checking the Chicken preparation from time to time, so that when it gets dried up, then stir the preparation again and add water along with milk (in a mixture form) to the preparation and mix the contents uniformly.

Cover the lid of the Karahi and allow the contents to cook till the Chicken mass becomes soft.
If the Chicken preparation is not adequately softened, then transfer the Chicken preparation to a cooker and boil it for 8 to 10 minutes, by adding extra water, if required.
Later open the lid of the Karahi/cooker to check the contents for salt & sugar taste, if required then add these according to need and transfer the Chicken preparation to a serving bowl.
Spread chopped Coriander leaves on the preparation (which should have adequate gravy content) for garnishing. This brings us to the end of the Recipe for Chicken Masala, as the preparation is now ready for serving to your friends or family members.
