Easy Chicken Curry Recipe – The Ingredients
1) Chicken Pieces – 300 grams
2) Onion – 2 large-sized ones
3) Tomato – 2 medium-sized ones
4) Garlic – 7 to 8 cloves
5) Ginger – 1 inch long
6) Green whole chili – 2 in number
7) Chili powder – 1/4th teaspoon
8) Turmeric powder – 1/4th teaspoon
9) Coriander powder – ½ teaspoon
10) Salt - ½ teaspoon
11) Bay leaves – 2 in number
12) Garam Masala Powder – 1/4th teaspoon
13) Nutmeg – 1/4th pieces
14) Sugar – 1 teaspoon
15) Ghee – 2 tablespoons
16) Water – 2 ½ cups
17) Potato (grated) – 1 medium-sized one
18) Coriander leaves – A handful
19) Kasuri Methi Powder (Dried Fenugreek leaves) – A small pinch
20) Shahi cumin seeds – 1/4th teaspoon
21) Roasted poppy seeds – ½ teaspoon
22) Lemon – 1 in number

The chicken pieces are washed 3 to 4 times by tap water. Next, the Chicken is then marinated with 2 to 3 teaspoons of lemon juice (obtained by squeezing a lemon) along with ½ teaspoon salt and little extra turmeric powder for half an hour.

The tomatoes and potato previously mentioned are grated separately. A paste of ginger and garlic is made. The onions are chopped finely. Powder of roasted poppy seeds is made.
Marinated chicken, fried onion with nutmeg powder, ginger-garlic paste, roasted powdered poppy seeds & grated potato (arranged clockwise).

Ghee is put in a deep pan (or any non-stick deep vessel) which is allowed to be warmed on a medium flamed burner. Whole green chili is put on this and fried. Next, it is taken out and kept aside.

The chopped onions are next put on the same pan and fried in the residual ghee still present, till it becomes golden brown in color and crispy. Once the desired form is obtained, it is taken out of the pan and allowed to cool down in normal room temperature & kept aside.

The nutmeg mentioned previously is grated. The onion preparation is crushed by the pressure of palm & mixed with the nutmeg and kept aside.

Now Shahi Jeera is added to the marinated chicken and put on the pan containing the rest of ghee and stirred for 2 to 3 minutes. Next turmeric powder, coriander powder, chili powder is added to the chicken, till the masala mixes nicely with each other.

Next, ginger garlic paste, tomato pulp (grated tomato) and bay leaves are added to the previous mixture & the preparation stirred continuously (over a medium flame) till a nice aroma starts to come out.

Next grated potatoes are added to the preparation, followed by sugar & poppy seed powder, as the stirring is continued. During the preparation of the dish, the chicken exudes a lot of water. The frying is continued till the exuding extra water gets almost evaporated and all the masala mixes with the chicken smoothly.

As the preparation begins to dry out, 2 ½ cups of water are added to the chicken preparation and the contents shifted to a pressure cooker. In the pressure cooker, the earlier described grated nutmeg & crushed fried onion mixture is added to the chicken preparation, followed by garam masala powder.

The lid of the cooker is covered and the contents allowed to boil in a medium flamed burner, till it becomes softened. As a rough estimate, it will take 7 to 8 whistles in the cooker.

Later it is removed from the oven and allowed to cool in room temperature. Once cooled the lid of the cooker is opened. This is done to check the softness of the chicken flesh & the salt taste of the preparation. If the saltiness is less than what is desired, the desired amount is further added. Kasuri Methi powder is added to hot chicken preparation, and the cooker covered by the lid & kept closed till it is time to serve the dish.

Coriander leaves are now chopped nicely. The chicken curry preparation which is practically ready now can be served along with plain roti, chapati or paratha. Just before serving the chopped coriander leaves are spread over the chicken curry preparation, to give it a pleasant taste and aroma
